These easy three-ingredient brownies are one of my favorite weekly go-to's for a healthy yet decadent treat. Made with three common everyday ingredients you're likely to have around the house, these brownies make baking for a plant-based and/or gluten-free diet super easy! I was a big fan of these brownies during our sabbatical to New Zealand, as I didn't have to make sure I kept gluten-free flour on hand as we traveled around and moved frequently from place to place. I was able to make a decadent treat for myself using what we already had (and bananas that were begging to be eaten)! I hope you enjoy this recipe as much as I do. 1/2 natural peanut butter (look for brands that don't add extra sugar!) scant 1/2 cup of cacao or cocoa powder (unsweetened) optional: splash of vanilla extra splash of espresso or coffee Toppings: use dark chocolate, or nutella, or canned frosting... whatever you have! Preheat the oven to 350° F. Mix all three ingredients together until very well combined and a batter forms. Bake for 15-20 minutes, until the batter has turned from shiny to a matte appearance. Immediately top with topping of choice. Allow to sit for about 10 minutes before diving in. Enjoy!
