One of the greatest joys of working remotely from home is having the ability to cook a nutritious and satisfying meal in the middle of the day. Thankfully, gone are the days when I had to make-do with sad leftovers in Tupperware or spending more money than I needed to on a meal out before rushing back to the office. Summer is here! With the lingering days and extra time spent outdoors or at the pool, I always look forward to creating something healthy and delicious in the kitchen to help me cool down.
